Cooking Instructions
Ingredients:
2 cups cooked shredded chicken (rotisserie works great)
1 ripe avocado, diced
¼ cup red onion, finely chopped
¼ cup cilantro, chopped
Juice of 1 lime
2 tbsp mayonnaise or Greek yogurt
Salt and pepper to taste
Optional: diced jalapeño or celery for crunch
Instructions:
In a large bowl, combine shredded chicken, avocado, onion, and cilantro.
In a small bowl, mix lime juice, mayo (or yogurt), salt, and pepper.
Toss everything gently until well combined.
Serve chilled over greens, on tostadas, or in sandwiches.
